Top of the mornin’ to ya!
Where to start? You may have noticed my absence yesterday… Well, I took a day off from writing because I just wasn’t feeling it. I did work out (I repeated my backyard cross training routine)and had an awesome breakfast, but just didn’t feel like hitting the keys. I woke up with a bit of a headache after hitting my head on the armoire in my bedroom around 4 am, when a sneaky Mer tried to climb into bed with Dennis and me. I sat up to turn and pick her up, but ended up whacking the side of my head instead. It’s still tender- owww. I waited until pretty late in the morning (around 11:00ish?) to work out, and figured by the time I was done, showered, ate some lunch, and finished some housework, it would be nearly time to pick up Mer from the bus anyway. My day just slipped away from me.
I did however, have some pretty yummy food yesterday. For breakfast, I fixed myself a couple of whole grain waffles, topped with vanilla bean cream cheese and layered with ‘baked’ pear slices(I simply sliced a pear and microwaved it on a plate for a couple of minutes). I added a pat of butter, and sprinkled the top with a bit of cinnamon and brown sugar. Fall. On. The. Brain.
It was similar to the Breakfast waffle pizza, and just as tasty. In fact it reminded me of a fancy french pastry, you’d find in a frou frou pastry shop. Mmmm…
Oh, and I tried a new coffee creamer…. It has the word ‘brownie’ in the title, what was I supposed to do, NOT buy it? Ha!
Lunch was yummy as well. I threw together a tuna salad using canned tuna in water, three hard boiled eggs, a bit of miracle whip, sliced carrots, sweet relish, and chopped onion. I sprinkled it with some seasoning salt, wrapped it up in a whole wheat flour tortilla and dug in-
I also enjoyed a FruitChia bar on the side. I picked it up at the grocery store on a whim, and let me tell ya- it was GOOD.
It’s basically tastes like a strawberry fruit roll-up with crunchy little seeds in it.
I have a major soft spot for fruit roll-ups. As a kid, my mom wouldn’t allow them in the house because they ‘were cavities waiting to happen’. By the time I got to high school, and could pick them up in the lunch line, I had braces and couldn’t eat them anyway- gah!
Anywho, back to what I was saying- these fruit bars are awesome! (Sorry Mom, at least they have Omega-3’s…) 🙂
Breakfast this morning was a protein-packed experiment. I wanted something cold to drink, since I’d just come in from my 1.96 mile run/walk, and was sweat-tay! Again, fall was on the brain, so I opted for something with pumpkin and spice. I also wanted to make sure to utilize some of Dennis’ vanilla protein powder since my legs have been feeling pretty sore and tired. I thought a pumpkin cheesecake smoothie sounded like a winner.
I tossed the following into the blender:
- 2 Tbsp ricotta cheese
- 2 Tbsp pumpkin
- 1 tsp vanilla bean cream cheese
- 4 Tbsp vanilla yogurt
- a shake of pumpkin spice
- 1/2 scoop of vanilla protein powder
- 1/4 c of milk
- a handful of ice cubes (around 5)
I blended until smooth and enjoyed in a tall glass. Enjoy!
I also enjoyed a slice of homemade banana bread this morning that I baked late last night. I got the recipe from- well, you know where😉 It was a hit with the family and tastes delish!
I actually ‘healthied’ it up a bit more by substituting whole wheat pastry flour in place of the unbleached all purpose flour the recipe called for. Gotta love that.
Alright, enough of the food porn for now. I need to make a run to Target for a much needed sock run- every pair I have, seem to be getting awfully holey! Yikes!
