Bananas Foster Oats

Happy Tuesday Peeps!

I just wanted to pop in quickly to give you guys the lowdown on this morning’s run and breakfast before I get down to some ‘room mom’ business…

Workout:  After a quick stretch and downing some water and a handful of dry Cheerios (I was hungry!), I popped out of the door for a 1 mile run.  I am currently on Week 8 of C25K, however today’s run was far from the scheduled workout of jogging for 28 minutes straight.  Instead, I chose to see how fast I could run a mile without stopping.  After yesterday’s sprints, I was in the mood to kick my longer runs up a notch and see what I could do.  No, I wasn’t planning on sprinting it- I’m not crazy!  I just wanted to see if I could run it a bit faster, but remain comfortable without throwing my breathing out of whack and getting a side cramp.  I started off strong (for me) at around a 10:30 pace.  However, I stopped to walk 1 minute around 9 minutes into the run, and again to get up the hill on my street.  I picked it up to finish at an 11:37 min/mile pace.  Probably a record for me, plus, it was fun!  I wish I hadn’t stopped to walk twice, but my legs were feeling the burn, especially after yesterday’s sprint work, and the weekend’s extra run.  Thursday’s run is going to be for distance, as I’ll ‘try’ to stick more to the C25K plan.  I’m just enjoying breaking things up a bit, and having some fun.  I find this portion of C25K to be a bit boring (and even a little discouraging) since I’m not at the 25-28-minutes-of-running-straight point yet.  I figure if I’m not having fun, then what’s the point?  🙂

Alright, on to breakfast:  I recently picked up a bag of butterscotch chips at the grocery store to make blondies with, and decided they needed to be incorporated in my breakfast this morning.  I ❤ butterscotch chips.

I threw in a splash of coconut milk creamer, to add some creaminess.

So into the bowl they went, along with oats, slivered almonds, sliced banana, and a shake of cinnamon.  The result was something akin to bananas foster, but without the excessive fatty butter and cream.  And I guess if I had really wanted to, I could have splashed some rum in there, but it was 8:45 am, and I live in Texas not on a resort in Jamaica.  😛  haha.

Bananas Foster Oats:

  • 1/2 C quick oats
  • small handful of butterscotch chips
  • 2 Tbsp slivered almonds
  • shake of cinnamon
  • half of a banana- sliced

Toss in a bowl and add enough water to cover the oats.  Microwave for 1 minute or until water is absorbed.  Add a splash of creamer or lowfat milk if desired.  Enjoy!
